Came across this one. I simply loved it:

Hofstadter's Law: It always takes longer than you expect, even when you take into account Hofstadter's Law.

This is especially good when explaining debugging a recursive method, or the call stack. When you reach the end of the sentence, you go to the definition of, Hofstadter's Law, because it might not be too clear how it's related (If you are a compiler). And this goes on and on (essentially a stack overflow).
